题目:Consumer Preferences for Cell-Cultivated Salmon: An Application of Clock-Proxy Auction using Real Products
摘要:Lab cultured meat is a novel food created with new biotechnology, which has potential to be sustainable and appeals to consumers caring animal welfare. There exist many studies about consumer acceptance based on hypothetical experiments that suffer from hypothetical biases. As the products start to appear in market with the legal approval in several countries, we are the first to conduct an incentive compatible experiment using real products. This study adapts the clock-proxy auction format for real-world applications in the bundled marketing of cell-cultivated salmon, paired with exclusive invitations for educational visits. We find that the willingness to pay (WTP) for 2 onzes of cultured salmon is about $40, and treatment information, illustrating the production process and nutritional attributes of cell-cultivated salmon, successfully increases the WTP for by about $20.
主讲人简介:
Dr. H. Holly Wang is a professor at the Department of Agricultural, Food, and Resource Economics at Michigan State University, and a Fellow of the Agricultural and Applied Economics Association. She previously held Assistant, Associate and Full Professor positions at the School of Economic Sciences at Washington State University and the Department of Agricultural Economics at Purdue University. She has also served as a guest, adjunct, or external professor in several universities in Canada, China, Finland, Germany, and the US. Dr. Wang received her BS degree from Tsinghua University, China, and both of her MA degree in Economics and Ph.D. degree in Agricultural Economics from Michigan State University.
Dr. Wang is a co-Editor-in-Chief of Food Policy and a co-Editor of China Agricultural Economic Review. Dr. Wang also held leadership positions within professional organizations, including the President of the Chinese Economists Society, an Executive Board Director of the Agricultural and Applied Economics Association, the founding Chair of the AAEA China Section, and the Chair of several international conferences.
Dr. Wang’s research covers topics like agricultural policies, risks and finances, the interaction among agricultural production, food consumption and the environment, consumer preferences, E-Commerce, and international markets. Over the past three decades, Dr. Wang has been at the forefront of applying cutting-edge quantitative methods to empirical issues, including time series and spatial econometrics, experimental methods, and machine learning. She has authored over 130 articles published in academic journals.
